Saptamana incepe mai frumos cu ceva dulce :) Azi am avut pofta de briose, si cum am zis sa incerc ceva inedit, am strecurat si o leguma in ele :)) Briose cu sfecla rosie. Arata tare dragut in hartiute roz pastelat, printre petale de trandafiri, nu? :)

Ingrediente (12 briose):

Curatam de coaja bucatile de sfecla rosie, le taiem cubulete si le introducem in blender. Adaugam restul ingredintelor si mixam bine pana avem o compozitie cremoasa si groasa ca smantana. Incalzim cuptorul la 180C si turnam compozitia in 12 forme de silicon pentru briose (gasiti aici). Le coacem 40 de min, pana trec testul scobitorii, apoi le lasam la racit cateva minute, le scoatem din forme si le savuram calde :) Pofta mare!

Weeks start better with something sweet :) Today I was craving for some muffins, and since I wanted to try something special, I sneaked in a veggie :)) Beetroot muffins. They look so nice in pastel pink cases, with rose petals among them, don’t you think? :)

Ingredients (12 pcs):

  • 400 g beetroot (2 medium beetroots)
  • 2 eggs
  • 200 g almond meal
  • 40 g cocoa powder
  • 100 g coconut oil
  • 125 ml maple syrup
  • 1 tsp baking powder
  • 1 pinch of salt

Peel the beetroots, chop them and put them in the blender. Add the rest of the ingredients and process well, until you get a smooth, creamy texture. Preheat the oven at 180 C, pour the mixture in 12 silicon muffin cases. Bake for about 40 min, until a skewer inserted in the center comes out clean. Let them cool for a couple of minutes, then take them out of the cases and enjoy warm :)
