De cand am descoperit aceste placintele cu aluat fraged, numite si empanadas, le-am facut in foarte multe variante si de curand mi-am luat si o ustensila speciala, atat de mult ne plac :) I-am facut Ilincai placintele umplute cu pui si cascaval, iar acum am incercat si varianta cu gem de gutui, preferatul meu :) Yummmy!

Ingrediente (9 buc):

  • 300g faina
  • 125g unt rece
  • 2 oua
  • 3 lg apa rece
  • 1 galbenus pentru uns
  • umplutura: 250g gem de gutui (sau gemul preferat)

Pentru aluat eu folosesc mixerul cu carligul pentru aluat. Adaug untul taiat cubulete, faina, ouale si apa rece si il las sa-si faca treaba :) Cand obtinem o bila de aluat, o transferam pe o suprafata pudrata cu faina si framantam putin totul sa fim siguri ca e omogena compozitia.

Pe o suprafata pudrata cu faina, intindem aluatul cu sucitorul intr-o foaie de grosime de aprox 4 mm. Decupam cerculete cu diametrul de 12cm, punem cate 2 lingurite de gem in centru si le pliem pe jumatate.

Eu am folosit aici aceasta ustensila pentru empanadas ca sa le sigilez :) Dar puteti foarte simplu sa le sigilati marginile cu o furculita, exact cum am facut la aceasta reteta.

Vom obtine 9 placintele pt diametru de 12 cm, daca faceti forme de 10cm obtineti 10 bucati. Le ungem cu galbenus si le coacem in cuptorul preincalzit la 190C pentru aprox 25-30 min, pana sunt aurii si rumenite frumos :) Pofta mare!

ENGLISH VERSION 

Ever since I discovered these tender empanadas, I’ve been making them with so may filling versions and I actually got a special tool to seal them :) I made Ilinca some cheese and chicken empanadas that were really successful and now I tried the jam filled version, with quince jam, my favorite :) Yummmy!

Ingredients (9 pcs):

  • 300 g flour
  • 125 g cold butter
  • 2 eggs
  • 3 tbsp cold water
  • 1 egg yolk for greasing
  • filling: 250 g quince jam (or favorite jam)

For the dough I use my stand mixer with the dough attachment hook. I add the butter cut into cubes, flour, eggs and cold water and let it do the work for me :) When a ball of dough forms, transfer onto a surface dusted with flour and knead until to make sure it’s smooth.

Roll the dough into a 4 mm thick sheet and cut out 12 cm diameter circles. Add 2 teaspoons of jam in the center and fold them in half.

I used a pastry turnover tool but it’s super easy to seal the edges with a fork, too, like I did in this recipe.

We’ll get 9 pies, if you make 10 cm diameter circles you’ll get 10 pies. Grease them with the egg yolk and bake them in the preheated oven at 170 C for 25-30 min, until they are nice and golden. Enjoy!
