Sunt plinele pietele de capsuni si e pacat sa nu profitam de ele la maxim :) Si dupa ce mananci pe nerasuflate 1 kilogram de capsuni (nu recunosc nimic! :)) si ti-ai satisfacut pofta, poti incerca si niste briose pufoase cu capsuni, ca variatie :D Ilinca e innebunita dupa ele, ca dupa orice pandispan de altfel :)

Ingrediente (24 de buc):

Batem ouale spuma cu zaharul brun pana isi dubleaza volumul, adaugam apoi laptele, uleiul si extractul de vanilie. Separat cernem faina cu praful de copt si un praf de sare. Incorporam usor amestecul uscat in cel umed. Taiem capsunile cubulete mici si le mozolim cu o lingura de faina.

Incorporam usor cu o spatula si capsunile in compozitie, apoi punem cu lingura din aluatul obtinut in forme de briose tapetate cu hartiute speciale. Le coacem 30 de min in cuptorul preincalzit la 170C timp de 30 de min, pana trec testul scobitorii. Pofta mare!

ENGLISH VERSION 

The farmer’s market is filled with strawberries and it’s a pity not to fully take advantage of them :) And after eating 1 kg of them in an seconds, you could try these fluffy strawberry muffins for a variation :)) they’re super yummy, Ilinca loves them :)

Ingredients (24 pcs):

  • 2 cups whole purpose white flour
  • 5 eggs
  • 1 cup brown unrefined sugar
  • 1/2 cup rapeseed oil
  • 3/4 cup almond milk
  • 1 tsp baking powder
  • 1 pinch of salt
  • 2 tsp natural vanilla extract
  • 400 g strawberries

Beat the eggs and sugar until foamy and double in volume, then add the milk, oil and vanilla. Separately sift the flour and mix with the baking powder and a pinch of salt. Chop the strawberry and coat them in 1 tablespoon of flour.

Gently fold in the strawberries in the mixture, then spoon it in muffin cases lined with baking paper. Bake for 30 min in the preheated oven at 170 C. Enjoy!
