Ilinca va avea prima serbare de Craciun la gradi si m-am oferit sa duc niste briose pentru copii, asa ca testez variante fara lactoza, un pitic din grupa ei avand intoleranta la asa ceva. Azi am pregatit niste briose pufoase cu mere si scortisoara, usoare si fara pic de zahar sau lactate :) Ne-au placut foarte mult amandurora, mai ales ca pot fi servite la micul dejun, fiind foarte hranitoare, pline de fibre, proteine si vitamine.

Ingrediente (12 briose):

Dam pe razatoarea mare merele, separam ouale si batem albusurile spuma. Adaugam usor galbenusurile si uleiul de cocos mixand incet, la viteza mica. Amestecam faina, semintele de chia, praful de copt si scortisoara, incorporeaza-le usor cu o spatula in amestecul de oua.

La final adaugam si merele rase (fara sa le scurgem) amestecate cu fulgii de ovaz, fulgii de mei si repartizam compozitia in 12 forme de silicon pentru briose. Am presarat deasupra cativa fulgi de ovaz si cate un praf de scortisoara. Coacem briosele 30 de minute la 170C, pana trec testul scobitorii. Pofta mare!

ENGLISH VERSION 

Ilinca is having her first Christmas party at kindergarten and I offered to bring some child friendly muffins, dairy free because there is a child in her group with dairy intolerance. So I am testing muffin recipes, today I made some super delicious apple muffins, full of fiber, vitamins and dairy/sugar-free. Please try them! :)

Ingredients (12 muffins):

  • 150 wholewheat flour
  • 2 tbsp oatmeal
  • 2 tbsp millet flakes
  • 2 tbsp chia seeds
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 5 eggs
  • 2 tbsp coconut oil
  • 2 medium apples (270 g grated)

Grate the apples on the large grater, separate the eggs and beat the egg whites until they form stiff peaks. Turn the mixer on slow speed and add the egg yolks and coconut oil. Mix the flour, chia seeds, cinnamon, baking powder and slowly fold in into the egg mixture, with a spatula.

In the end fold in the grated apples mixed with the oatmeal and millet flakes. Spoon the mixture into 12 silicone muffin cases and bake for 30 min at 170C. I sprinkled some oatmeal and cinnamon on top, before baking. Enjoy!
