De ziua printesei mele am pregatit niste briose super bune cu prune, fara zahar alb, indulcite natural, 100% baby-friendly :) Desi le-am facut repede, cu ce am avut prin casa si nici macar nu am apucat sa fac mai multe poze, au iesit dementiale! Si am descoperit ca pot obtine pandispanuri pufoase si cu miere, secretul e sa bat foaaaarte mult si bine ouale :) Multi ani traiascaaaaa!

Ingrediente (18 briose):

Amestecam intr-un bol ingredientele uscate: faina, fulgii de ovaz, praful de copt, scortisoara si un praf de sare. Batem ouale spuma pana isi dubleaza sau chiar tripleaza volumul, adaugam apoi mierea, iaurtul si untul topit si racit, amestecand usor.

Incorporam usor cele 2 amestecuri, adaugam si prunele taiate cubulete mici la final si impartim compozitia in 18 forme de silicon pentru briose. Coacem briosele aprox 25 de min in cuptorul preincalzit la 170C, pana trec testul scobitorii. Pofta mare, pitici! :)

For my precious lady’s second birthday I made some super tasty muffins with plums, sugar-free, 100% baby-friendly :) Although I made super quickly, with stuff I had in my pantry, and didn’t even get to take more photos, they turned out amazing! And I discovered you can bake sweet cakes with honey, you just have to whisk the eggs a looot :) Happy birthday, Ilinca!

Ingredients (18 muffins):

  • 250 g whole purpose flour
  • 50 g oatmeal
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 pinch of salt
  • 4 organic eggs
  • 3 tbsp honey
  • 200 g plums
  • 300 g full fat Greek yogurt
  • 75 g melted butter

Mix the dry ingredients in a bowl: flour, oatmeal, baking powder, cinnamon and a pinch of salt. Whisk the eggs until they triple their volume, then add the honey, yogurt, melted and chilled butter.

Combine the 2 mixture, add the chopped plums in the end and divide the mixture in 18 silicone muffins cases. bake the muffins for 25 min at 170 C, until a skewer inserted  in the center comes out clean. Enjoy!
