Ilinca a rezistat eroic aproape 2 luni la gradi sanatoasa tun, dar iata ca a venit si prima viroza, asa ca zacem amandoua acasa saptamana asta :)) Si ne-am pregatit ceva bun, un fel de „comfort food”, sa ne incalzeasca sufletele racite :) Budinca de orez la cuptor. Buna de tot chiar si rece, ideala pentru un pachetel gustos si satios :)

Ingrediente (8 portii):

Clatim bine orezul si il punem la fiert impreuna cu semintele de la pastaia de vanilie in lapte aprox 20 de min, pana se umfla si absoarbe lichidul, dupa care il lasam la racit. Separat batem ouale cu branza de vaci, mierea, scortisoara, coaja rasa fin de lamaie si de portocala. Incorporam usor si compozitia racita de orez cu lapte, iar la final adaugam si stafidele.

Turnam totul intr-o tava rotunda cu fund detasabil (22 cm diametru) unsa cu unt si tapetata cu hartie de copt si coacem budinca in cuptorul preincalzit la 170C timp de aprox 40 de min, pana e ferma la atingere si putin rumenita la suprafata. O lasam sa se raceasca, apoi o taiem felii. Eu am mai ras putina coaja de portocala deasupra. Pofta mare! :)

ENGLISH VERSION 

Ilinca managed to stay healthy almost 2 months of daycare, until now when the seasonal flu knocked both of us down this week :)) So we made a delicious comfort food to sooth our pain:) Baked rice pudding. Super yummy even cold, a perfect tasty nutritious treat :)

Ingredients (8 servings):

  • 800 ml full-fat milk
  • 200 g rice
  • 3-4 tbsp honey (to taste)
  • 3 free range eggs
  • 200 g cottage cheese
  • zest of 1 organic lemon
  • zest of 1/2 organic orange
  • 150 g raisins
  • seeds from 1 vanilla bean
  • 1/2 tsp cinnamon

Rinse the rice and boil it in the milk and vanilla bean seeds, until the rice puffs and absorbs the milk, then set aside to chill. Separately whisk the eggs, cottage cheese, honey, cinnamon, finely grated lemon and orange zest. Fold in the rice mixture and, in the end, the raisins.

Pour everything in a round spring-form pan (22 cm diameter) greased with butter and lined with baking paper and bake in the preheated oven at 170 C for about 40 min, until the surface is firm and slightly golden. Let it chill then slice and enjoy! :)
