Greu cu rontaitul cand nu mai poti manca deloc fainoase si dulciuri… Si tare bucuroasa am fost cand am descoperit aceasta reteta: crackers de conopida si quinoa. Sunt deliciosi cu sos de rosii, in loc de paine la sandvisuri sau chiar pe post de blat pentru pizza… Geniali! :) Ii puteti taia in ce forme doriti si savura in ce combinatie va trece prin cap :) Enjoy!

Ingrediente:

Fierbem conopida la aburi, apoi o maruntim in robotul de bucatarie pana arata ca un pilaf :) O amestecam cu restul ingredientelor. Vom obtine un aluat destul de moale, dar omogen. Il intindem pe o tava mare tapetata cu hartie de copt intr-o forma dreptunghiulara. Cu un taietor de pizza sau cu un cutit normal trasam liniile unde vom taia crackersii ulterior. Ii coacem la cuptorul incins la foc mediu (180C) timp de vreo 40 de minute, apoi inca 10 minute cu ventilatia pornita, pana se rumenesc pe margini. Ii lasam la racit, apoi ii taiem si ii savuram cu sos de rosii sau ce mai vrem noi :) Pofta mare!

ENGLISH VERSION

It’s hard with the nibbling when you can’t eat flour and sugar anymore… So I was very happy when I found this recipe: cauliflower and quinoa crackers. They’re delicious with tomato sauce, as bread replacement in sandwiches or even as pizza crust… Brilliant! You can cut them in what shapes you like and enjoy them in any combination crosses your mind :) Enjoy!

Ingredients:

  • 1 large cauliflower
  • 1 cup boiled quinoa (1/3 cup dry quinoa)
  • 1/2 cup quinoa flour
  • 3 eggs lightly beaten
  • 1 cup grated mozzarella
  • 1 tsp Himalayan salt
  • 1 tsp garlic powder
  • 1 tsp dry oregano
  • tomato sauce for serving

Steam the cauliflower, then chop it in the food processor until it looks like risotto :)  Mix it with the rest of the ingredients. We’ll obtain a pretty soft but homogeneous dough. Roll it on a large rectangular tray lined with baking paper. Using a pizza cutter or knife, cut it into crackers shapes. Bake everything at 180 C for about 40 min, then 10 more min with the ventilation on, until the edges become brownish. Let them cool, then cut them and enjoy them with tomato sauce or whatever :) Dig in!
