Pentru 14 februarie, adica de aniversarea casatoriei noastre, am pregatit niste fursecuri cu stafide si caramel, fragede si aromate pe care sa le savuram toti 3, mami, tati si Ilinca :) Aroma de caramel e data de zaharul de cocos si siropul de artar, sunt extrem de fragede,  gustoase si au o culoare tare frumoasa :)

Ingrediente (48 de buc):

Frecam bine untul moale la temperatura camerei cu zaharul de cocos, adaugam apoi ouale, unul cate unul, siropul de artar, vanilia si romul. Separat amestecam faina cu praful de copt si un praf de sare. Adaugam in amestecul lichid si faina, putin cate putin, framantand bine, iar la final incorporam si stafidele.

Transferam aluatul pe o suprafata presarata cu faina si il framantam bine, pana nu mai este lipicios, adaugand faina daca e nevoie. Intindem aluatul cu sucitorul in strat mediu ca grosime si decupam fursecurile cu o forma rotunda. Eu le-am aplicat si o stampila cu I love you :) (gasiti aici stampile pentru biscuiti).

Le asezam pe o tava intinsa tapetata cu hartie de copt si le coacem 12 min in cuptorul preincalzit la 170C. Ies 2 tavi mari din aceste cantitati. Le scoatem din cuptor, le mai lasam 2 minute in tava, apoi le savuram cu multa iubire :)

ENGLISH VERSION 

For our second wedding anniversary on February the 14th I made these raisin caramel cookies, tender and delicious, for all 3 of us to enjoy :) The caramel flavor is given by the coconut sugar and maple syrup, they’re extremely tender and have a lovely color :)

Ingredients (48 pcs):

  • 400 g whole purpose organic flour (+extra for kneading)
  • 1 tsp baking powder
  • 1 pinch of salt
  • 150 g coconut sugar
  • 3 tbsp maple syrup
  • 180g butter
  • 3 free range eggs
  • 1 tsp vanilla extract
  • 1 tsp rum essence (optional)
  • 100 g dark raisins

Whisk the softened butter with the coconut sugar, then add the eggs, one by one, maple syrup, vanilla and rum. Separately combine the flour, baking powder and salt. Gradually add the dry mixture into the wet one, kneading well, and in the end fold in the raisins.

Transfer the dough on a floured surface and knead well until it’s not sticky anymore, adding more flour if necessary. Roll the dough into a medium thick sheet and cut out cookies. I applied a cute cookie stamp as well :)

Place the cookies on a  large tray lined with baking paper and bake them for 12 min in the preheated oven at 170 C. These quantities make about 2 large trays. Take the tray out of the oven, let the cookies stay 2 more min, then remove them from the tray and enjoy them with a lot of love :)
