Cu gandul la concediu, am pregatit rapid aceasta salata mediteraneana de quinoa :) Excelenta pentru o zi calduroasa de vara, se face repede si e foarte gustoasa. Iar quinoa ne energizeaza si ne tine de foame. O incercati si voi? :)

Ingrediente (2 portii)

  • 250g quinoa fiarta
  • 2 rosii mari
  • 1/2 dovlecel
  • 50g masline (si negre si verzi, sa fie cat mai colorata :)
  • 150g cubulete de branza feta (sau tofu pt vegani)
  • 1 morcov mic ras
  • 1 ceapa verde
  • 1/2 legatura de marar
  • cateva fire de menta
  • 3 lg ulei de masline
  • 2 lg otet (am folosit otet din cidru de mere, luat de aici)
  • sare, piper

Tocam marunt legumele si verdeata, le amestecam cu branza feta/tofu si asezonam salata cu ulei de masline, otet, sare si piper. Pofta mare!

Dreaming of the summer holidays, I prepared this Mediterranean quinoa salad :) It’s excellent on a hot summer day, easy to make and very tasty. And the quinoa energizes and keeps us full. Will you give it a try? :)

Ingredients (2 servings)

  • 250 g boiled quinoa
  • 2 large tomatoes
  • 1/2 zucchini
  • 50 g olives (black and green, to have a colorful salad :)
  • 150 g Feta cheese (or tofu for vegans)
  • 1 small carrot, grated
  • 1 spring onion
  • 1/2 bunch of dill
  • a few mint leaves
  • 3 tbsp olive oil
  • 2 tbsp vinegar (I used apple cider vinegar)
  • salt and pepper

Finely chop the vegetables and herbs, mix them with the Feta cubes and season the salad with olive oil, vinegar, salt and pepper. Enjoy!
