Ador salata tabbouleh si ador quinoa (pe langa faptul ca e gustoasa, e si super-aliment). Asadar nu putea sa iasa decat ceva minunat din acest tabbouleh de quinoa din care as putea sa mananc dimineata, la pranz si seara fara sa ma plictisesc :) Merge de minune cu chiftelute de naut. Simpla si buna.

Ingrediente (2 portii):

  • 1 cana de quinoa (aprox 100g)
  • 2 legaturi de patrunjel
  • 2 castraveti
  • o mana de rosii cherry
  • 2 cepe verzi mici
  • cateva frunze de menta
  • zeama de la 1 lamaie
  • 2 lgt ulei de masline
  • sare, piper dupa gust

Spalam si fierbem quinoa 10-15 min in 2 cani de apa cu putina sare (in general, 1 parte de quinoa se fierbe in 2 parti de apa). Tocam marunt patrunjelul, rupem cu mana frunzele de menta, pentru a pastra aromele.

Taiem bucati mici rosiile, castravetii si ceapa verde si le amestecam apoi cu quinoa fiarta (si scursa) si cu verdeturile tocate. Asezonam cu zeama de lamaie, ulei de masline, sare si piper. Pofta mare!

ENGLISH VERSION

I love Tabbouleh salad and I love quinoa (besides being tasty it’s also a super food). So their combination couldn’t be anything other than amazing :) I think I could have it at breakfast, lunch and dinner and not get enough of it :) It’s great with falafel. Simple and delicious.

Ingredients (2 servings):

  • 1 cup of quinoa (about 100 g)
  • 2 bunches of parsley
  • 2 cucumbers
  • a handful cherry tomatoes
  • 2 small spring onions
  • a couple of mint leaves
  • juice of 1 lemon
  • 2 tsp olive oil
  • salt, pepper to taste

Wash and boil the quinoa for 10-15 min in 2 cups of water with a little salt (in general, 1 part quinoa is boiled in 2 parts water). Finely chop the parsley, tear the mint leaves with your hands to release the flavors.

Chop the tomatoes, cucumbers, spring onions and gently mix them with the boiled and drained quinoa and herbs. Season with lemon juice, olive oil, salt and pepper. Enjoy!
