A venit vara si e pacat sa nu profitam fructele minunate de sezon: capsuni, afine, zmeura… Azi am facut cea mai buna tarta keto cu fructe si aluat fraged. E cel mai genial aluat keto, va recomand sa il incercati, merge cu placintele, tarte, empanadas, chiar si pizza! E usor de facut, foarte maleabil si orice reteta cu aluat fraged poate fi adaptata la keto cu ajutorul acestui aluat :)

Aluat fraged:

Umplutura:

  • 300g fructe de padure (capsuni, afine, zmeura etc)
  • 3-4 lg eritritol (sau indulcitorul preferat)
  • 2 lg faina de cocos
  • 1 galbenus pentru uns

Amestecam toate ingredientele pentru aluat: fie cu robotul pentru bucatarie, fie cu ustensila pt aluat, fie cu degetele :) Vom obtine un aluat neted, putin moale si maleabil. Formam o bila si o invelim in folie alimentara, o introducem la rece minim 1 ora.

Amestecam fructele bine scurse cu indulcitorul si faina de cocos. Intindem aluatul intre 2 foi de hartie de copt, inlaturam foaia de deasupra si asezam fructele pe centrul aluatului, lasand o dinstanta maririca fata de margini.

Pliem marginile peste umplutura ca in imagini, ungem aluatul cu galbenus si coacem tarta la 180C timp de 20 min, pana se rumeneste frumos :) Enjoy!

ENGLISH VERSION

Summer is here and it’s a pity not to take advantage of the fresh berries available: strawberries, blueberries, raspberries… Today I made the best keto berry galette with the most amazing keto crust :) I recommend you try it for everything: pies, empanadas, tarts, even pizza! It’s so easy to make, easy to mold, I love it! :)

Crust:

  • 100 g almond flour
  • 40 g coconut flour
  • 1/2 tsp xanthan gum
  • 1 egg
  • 100 g butter, melted
  • 55 g cream cheese
  • 1/4 tsp salt
  • 2 tsp apple cider vinegar

Filling:

  • 300 g berries (strawberries, blueberries, raspberries etc)
  • 3-4 tbsp erythritol (or favorite sweetener)
  • 2 tbsp coconut flour
  • 1 egg yolk for greasing

Simply mix all the ingredients for the crust using a food processor or your fingers :) You’ll get a soft, smooth dough, make a ball out of it, wrap it in clingfilm and place in the fridge for at least 1 hour.

Combine the well drained berries with the coconut flour and sweetener. Roll the chilled dough between 2 sheets of baking paper, remove the paper on top and place the berries in the center, leaving enough empty space on the edges.

Fold the margins over the filling like in the photos above, grease the tart with egg yolk and bake for 20 min at 180 C, until it turns lovely golden brown :) Enjoy!
