Le servim cu iaurt, fructe, si optional miere pentru copii peste 1 an (sub 1 an mierea e interzisa din cauza riscului de botulism). Pofta mare!
ENGLISH VERSION
Now that our holiday at the seaside is over, I started giving Teo other solids than purees, and because I just got my new deBuyer steel pan, I started with some baby friendly banana pancakes :) They are SO easy to make, from only 4 ingredients, sweetener free, but the banana and coconut flour give them a wonderful natural sweetness :) They were a massive HIT and we will for sure put the recipe on repeat :)
Ingredients (9 pcs):
- 1 banana (150 g)
- 2 eggs
- 2 tbsp coconut flour (15 g)
- 1 tbsp milk* (15 ml)
Mash the banana with a fork, then add the eggs, milk and coconut flour. Please weigh exactly 15 g and do NOT substitute with any other flour, coconut flour is very absorbent (1 tbsp coconut flour equals 4 tbsp plain flour).
Blend the mixture with an immersion blender, until you get a smooth consistency, then let it sit 2-3 min, for the flour to absorb the liquids and the batter to puff up a little :) Grease the pan with a little oil.
This steel pan must be greased with oil for the first time and „burnt” in the oven for 1 hour, then it becomes more and more non-stick with every use :) It’s brilliant and it will last you a lifetime, or even more generations :)
Pour one ice cream scoop pf batter in the pan and form pancakes about 7-9 cm diameter. Cook over low heat until small bubbles appear on the surface. Flip and cook on the other side, too. Serve with yogurt and fruit. For babies over 1 year old, you can drizzle a little honey, but not under this age, it’s forbidden because of the risk of botulism. Enjoy! *Use dairy free milk for dairy intolerance.
