Prajitura low carb cu mere. Am pentru voi o prajitura DEMENTIALA low carb, frageda, aromata, cu mere caramelizate, e ceva divin! Si fara zahar, gluten, cereale, seamana super mult cu o prajitura clasica de mere, singura diferenta e ca aceasta e mult mai hranitoare si nu creste glicemia :) (8 portii a cate 298 cal si 4g net carbs)

Prajitura:

Topping:

  • 30g unt
  • 150g mere taiate cubulete
  • 30g eritritol rasnit
  • 1 lgt scortisoara
  • 50g faina de migdale
  • 40g nuci, taiate grosier

Pentru topping: topim untul intr-o tigaie, adaugam merele taiate cubulete mici, indulcitorul pudra, scortisoara si le gatim amestecam frecvent, pana se inmoaie putin.

Merele nu trebuie sotate foarte mult, se vor mai gati si in cuptor. Adaugam faina de migdale, nucile tocate grosier si amestecam. Lasam amestecul la racit pana ne ocupam de aluat.

Pentru prajitura: amestecam ingredientele uscate: faina de cocos, de migdale, praful de copt, scortisoara. Separat mixam untul moale cu indulcitorul pudra, adaugam apoi ouale, albusurile si laptele de migdale.

In amestecul lichid il adaugam pe acel uscat si omogenizam bine tot. Ungem cu ulei o forma mica de tort (18cm diametru) si o tapetam cu hartie de copt. Turnam aluatul, il nivelam frumos si adaugam toppingul crocant deasupra.

Coacem prajitura in cuptorul preincalzit la 180C timp de aprox 1 ora, sau chiar mai mult, pana trece testul scobitorii, adica o scobitoare introdusa in centru iese uscata.

Dupa ce s-a racit o scoatem din forma, eu i-am pus si o glazura din indulcitor pudra si lapte de migdale. In casa miroase superb a mere coapte, iar aceasta prajitura low carb cu mere e ABSOLUT DEMENTIALA, pofta mare! :)

I’ve got a FANTASTIC recipe for you, low carb apple crumb cake, tender, with caramelized apples, it’s divine! And it so much resembles classic crumb cake, the only difference is this one is nutritious and does not raise your blood sugar :) ) (8 servings of 298 cal and 4g net carbs each)

Cake:

  • 100 g almond flour
  • 30 g coconut flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 90 g butter
  • 65g eritritol, ground into powder
  • 2 eggs, 2 egg whites
  • 100 ml almond milk, unsweetened

Topping:

  • 30 g butter
  • 150 g apples, diced
  • 30g eritritol, ground into powder
  • 1 tsp cinnamon
  • 50 g almond flour
  • 40 g walnuts, roughly chopped

For the topping: melt the butter in a pan, then add the diced apples, powdered sweetener, cinnamon and cook them, mixing constantly until slightly softened.

The apples should not be sauted too much, they will cook more in the oven, too. Add the almond flour, roughly chopped walnuts and stir. Set aside to cool.

For the cake: mix the dry ingredients: coconut flour, almond flour, baking powder, cinnamons. Separately beat the butter and powdered sweetener with a mixer, then add the eggs, egg whites and almond milk.

Into the liquid mixture add the dry one and combine them until you get a smooth batter. Line a small cake pan (18 cm diameter) with oil and line with baking paper. Pour the batter, level it nicely and add the crumble topping.

Bake the cake in the preheated oven at 180C for about 1 hour or even more, until a skewer inserted in the center comes out clean. After it’s cooled, remove from the pan and slice, I added a glaze made from powdered sweetener and almond milk. The house smells gorgeously like baked apples and this low carb apple crumb cake is THE BOMB. Enjoy!
