Long time no muffin.. :)  E timpul pentru brioseeee! Unele de sezon, cu pere dulci, zemoase si ghimbir picant, sa ne incalzeasca with a spicy kick :) Sunt geniale! Maine le iau cu mine in parc, sa am energie pentru cat ma alearga piticoata :) Briose cu pere si ghimbir.

Ingrediente (10 briose):

  • 200g faina alba
  • 1 lgt praf de copt
  • 1 lgt scortisoara
  • 100g zahar de cocos
  • 100g unt
  • 2 oua de tara
  • 150g iaurt grecesc
  • 100ml lapte integral
  • 1 para (150g)
  • 1 lgt ghimbir proaspat ras
  • 30g ghimbir confiat

Batem untul cu zaharul de cocos, adaugam apoi ouale (unul cate unul), iaurtul, laptele, ghimbirul ras, mixand in continuare cu un tel. Intr-un bol separat amesteam faina cu praful de copt, scortisoara si un praf de sare. Combinam cele 2 amestecuri, iar la final incorporam para taiata cubulete si mozolita cu o lingura de faina si ghimbirul confiat tocat marunt.

Tapetam o tava pentru briose cu hartiute speciale si le umplem cam 2/3 folosind o lingura pentru inghetata. Le coacem cam 25 de minute la 180C, pana trec testul scobitorii. Le lasam sa se raceasca pe un gratar, apoi sunt gata de atac :) Pofta mare!

ENGLISH VERSION 

Long time no muffin.. :)  It’s time for some muffins! Autumn muffins, with sweet juicy pears and tangy ginger to warm us up with a spicy kick :) They’re super! I’ll grab some with me tomorrow in the park, to fuel me up for toddler running :) Pear ginger muffins.

Ingredients (10 muffins):

  • 200g whole purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 100 g coconut sugar
  • 100 g butter
  • 2 free range eggs
  • 150 g Greek yogurt
  • 100 ml full fat milk
  • 1 pear (150 g)
  • 1 tsp grated fresh ginger
  • 30 g candied ginger

Beat the butter with the coconut sugar, then add the eggs, one by one, milk, yogurt and finely grated ginger, constantly whisking. In a separate bowl mix the flour with the baking powder, cinnamon and a pinch of salt. Combine the 2 mixtures and in the end fold in the chopped pear coated in a tablespoon of flour and chopped candied ginger.

Line a muffin tray with special paper cases and fill them 2/3 using an ice cream scoop. Bake the muffins for about 25 minat 180C, until a skewer inserted in the center comes out clean. Let them cool on a rack, then they’re ready to go :) Enjoy!
