Diminetile de weekend parca sunt mai frumoase atunci cand in casa miroase a clatite umplute cu tot felul de bunatati :) Azi am incercat o varianta super sanatoasa de clatite din faina de migdale, low carb, fara gluten si fara lactate, care pot fi servite atat cu umpluturi dulci cat si sarate si sunt superrrr! :)

Ingrediente (4 portii):

Batem bine ouale, adaugam apoi uleiul de cocos, faina de migdale, scortisoara, vanilia, praful de sare si omogenizam bine totul cu un tel, pana nu mai avem cocoloase. Ungem cu ulei de cocos o tigaie si o incingem bine. Turnam 1/4 din compozitie in tigaie si o rotim, pentru a acoperi suprafata tigaii.

Coacem clatita cam 1 minut, apoi o intoarcem si o mai lasam cam 30 de sec si pe partea cealalta. Fiind subtirele se coc repede. Repetam pana terminam aluatul eu am obtinut 4 clatite maricele din aceste cantitati. Le servim cu ce dorim. Pofta mare!

*In cazul umpluturii sarate omiteti extractul de vanilie si scortisoara.

ENGLISH VERSION

Morning weekend are so much better when the entire house smells like crepes filled up with all sorts of goodies :) Today I tried a super healthy version of them: almond flour crepes, low carb, gluten and dairy free, that can be filled with sweet or savory stuff :)

Ingredients (4 servings):

  • 30 g almond flour
  • 4 eggs
  • 1 tsp coconut oil
  • 1 pinch of salt
  • 1/2 tsp vanilla extract*
  • 1 pinch of cinnamon*
  • coconut oil for greasing the pan
  • sweet filling: fruit, cottage cheese+raisins, jam/preserve, peanut/almond butter etc
  • savory filling*: sauteed mushrooms, cheese+dill, mozzarella etc

Whisk well the eggs, then add the coconut oil, almond flour, cinnamon, vanilla, pinch of salt and whisk everything well until smooth and not lumpy. Grease a nonstick pan with a little oil and heat it. Pour 1/4 of the mixture in the pan, spread well on all the surface.

Cook for about 1 min, then flip and cook 30 more sec.They are thin and will be done quickly. Repeat until you run out of the dough, I got 4 large crepes. Serve with whatever your heart desires :) Enjoy!

*For the savory filling don’t use vanilla and cinnamon.
