In timpul postului, o mancare foarte simpla pe care trebuie neaparat sa o incercati este cea de praz cu masline :) Foarte, foarte gustoasa, se face usor si, alaturi de o felie de paine proaspata de casa, poate constitui o masa vegana perfecta, satioasa si hranitoare :)

Ingrediente (2-3 portii):

  • 4 fire de praz
  • 2 lg ulei de masline
  • 1 ceapa rosie
  • 1 morcov
  • 1 ardei capia
  • 300ml suc de rosii
  • sare, piper dupa gust
  • 100g masline

Dam pe razatoare morcovul si tocam ceapa marunt. Incalzim uleiul intr-o cratita incapatoare si calim ceapa si morcovul, pana ceapa devine translucida, adaugam apoi prazul taiat rondele potrivite (doar partea alba).

Cand prazul incepe sa se inmoaie putin, adaugam sucul de rosii, sare, piper si ardeiul tocat. Lasam mancarea pe foc aprox 10-15 min, amestecand din cand in cand si adaugand putin apa daca sosul scade prea mult. La final adaugam si maslinele si servim mancarea calda. Pofta mare! :)

ENGLISH VERSION

While fasting or on a vegan diet, you’ve definitely got to try this simple tasty meal: leek & olive stew :) It’s so easy to make, super delicious and with a slice of homemade bread, makes a perfect nutritious vegan meal :)

Ingredients (2-3 servings):

  • 4 leeks
  • 2 tbsp olive oil
  • 1 red onion
  • 1 carrot
  • 1 red pepper
  • 300 ml tomato juice
  • salt, pepper to taste
  • 100 g olives

Grate the carrot and dice the onion. Heat the olive oil in a large pan and saute the carrot and onion until the onion is translucent, then add the chopped leek (white parts only).

When the leek starts to soften a little, add the tomato juice, salt and pepper and chopped pepper. Let it all cook for 10-15 min, stirring form time to time and adding a little water if the sauce reduces too much. Serve hot and enjoy! :)
