Tot circula pe internet reteta de oua coapte in avocado si de mult timp am zis ca incerc si eu :) Azi le-am facut in sfarsit si au avut mare succes. Chiar sunt o idee de mic dejun sanatos si satios, iar daca iti place sa mananci oua dimineata, sunt o variatie buna de la clasicele ochiuri :) Cu o felie de paine prajita de casa, furnizeaza suficienta energie pana la pranz! :)

Ingrediente (1 portie):

  • 1 avocado
  • 2 oua mici
  • sare, piper
  • paine prajita si ceapa verde pentru servit

Desfacem avocado pe jumatate, inlaturam samburele si cu o lingura scoatem o bucata din pulpa cat sa incapa un ou micut inauntru (pulpa se refoloseste la alta reteta, o stropim cu lamaie si o tinem in frigider). Daca folositi oua mai mari, cum am avut eu, puteti pastra o parte din albus pentru altceva, cum ar fi bezele :)

Punem cele 2 jumatati de avocado intr-o tava, punem cate un ou in fiecare jumatate si le coacem aprox 15-17 min la 170C, in functie de cat de mari sunt avocado si ouale, pana sunt gatite. Presaram sare si piper deasupra si le servim cu ceapa verde si paine prajita. Pofta mare!

ENGLISH VERSION 

The internet is filled with avocado baked eggs recipes, so I had to try one for myself :) They turned out great, a super healthy and filling breakfast, and if you’re an egg person in the morning, this is a great variation from the classic fried egg :) Add a slice of toast and you get enough energy to keep you going until lunch :)

Ingredients (1 serving):

  • 1 avocado
  • 2 small eggs
  • salt, pepper
  • toast and spring onions for serving

Split the avocado in half, discard the pit and spoon out some of pulp enough to fit a small egg inside. Don’t throw away that pulp, just drizzle lemon juice over it and store it in the fridge. If you have large eggs, like I did, save some of the egg white for some other recipe, like meringue :)

Place the 2 avocado halves on a tray, add and egg inside each one and bake for about 15-17 min at 170 C, depending on the size of the avocado/eggs, until they are cooked. Sprinkle salt and pepper and serve with spring onions and toast. Enjoy!
