Nu mai stiti ce sa mancati fresh in sezonul rece? Aceasta salata de iarna cu spanac, portocale si quinoa e foarte hranitoare, gustoasa, plina de vitamine si proteine :) Nu mai zic de culorile absolut superbe din farfurie :)

Ingrediente (2 portii):

  • 1 cana quinoa
  • 100g baby spanac
  • 2 portocale
  • 2 mere
  • 1/2 sfecla rosie mica
  • 1 morcov
  • 2-3 lg nuci (pecan sau romanesti)
  • 2 lgt ulei de masline
  • sucul de la 1/2 portocala
  • sare, piper dupa gust

Clatim bine quinoa (pentru a indeparta gustul amarui) si o fierbem in 2 cani de apa aprox 20 de min,pana se umfla. O scurgem si o lasam la racit. Dam pe razatoare morcovul, feliem merele si portocalele si taiem bastonase sfecla rosie. Pentru dressing amestecam sucul de portocale cu uleiul de masline, sare si piper. Intr-un bol mare amestecam frunzele de spanac, fructele si legumele taiate, nucile si quinoa scursa si racita. Turnam dressingul, amestecam bine si savuram cu pofta! :)

Running out of ideas of fresh winter meals? This winter salad with spinach, oranges and quinoa is super tasty, nutritious, full of vitamins and protein :) And it has so many beautiful colors… :)

Ingredients (2 servings):

  • 1 cup quinoa
  • 100 g baby spinach
  • 2 oranges
  • 2 apples
  • 1/2 small raw beetroot
  • 1 carrot
  • 2-3 tbsp nuts (pecan or walnuts)
  • 2 tsp olive oil
  • juice from  1/2 orange
  • salt, pepper to taste

Rinse the quinoa to remove the bitter flavor and boil for 20 min in 2 cups of water, until fluffy. Drain and set aside, to chill. Grate the carrot,slice the oranges and apples, cut the beetroot into thin sticks. For the dressing mix the orange juice with the olive oil, salt and pepper. In a large bowl combine the spinach, chopped fruits and veggies, nuts and drained quinoa. Add the dressing, toss everything well and serve :) Dig in!
