O supa fierbinte si aromata e tot ce imi doresc pe vremea aceasta, voi nu? :) Supa de ardei copti si quinoa. Trebuie sa o incercati! :)

Ingrediente (4 portii):

  • 1/2 cana quinoa
  • 4 ardei copti
  • 1 conserva de rosii
  • 2 cepe
  • 3 tije de telina Apio (sau o radacina mica de telina)
  • 2 catei de usturoi
  • 1 lgt oregano uscat
  • sare si piper dupa gust
  • 1/2 legatura patrunjel si crutoane pentru servit

Punem la fiert intr-o oala legumele tocate: ardeii, rosile, ceapa, telina si cateii de usturoi. Lasam la fiert cam 15 minute, apoi pasam totul cu blenderul vertical, adaugam quinoa si mai lasam inca 15 min pe foc. Servim fierbinte, neaparat cu verdeata si crutoane integrale crocante :) Pofta mare!

ENGLISH VERSION

A hot savory soup is all I am longing for on this cold weather, don’t you? :) Roasted pepper & quinoa soup/ You’ve got to try it! :)

Ingredients (4 servings):

  • 1/2 cup quinoa
  • 4 roasted peppers
  • 1 can of tomatoes
  • 2 onions
  • 3 celery stalks (or a small celeriac)
  • 2 cloves of garlic
  • 1 tsp dried oregano
  • salt and pepper to taste
  • 1/2 bunch of parsley and croutons for serving

Chop all the vegetables: peppers, tomatoes, onion, celery and cloves of garlic and start heating them in a pot with water. Bring to a boil, let them cook for 15 min, then puree everything with the vertical blender and add the quinoa. Let everything boil 15 min more. Serve hot, with fresh parsley and crunchy wholewheat croutons :) Enjoy!
