Dupa succesul prajiturii lipicioase cu caramel am zis ca trebuie neaparat sa fac o varianta de post :) Ca sa variez am creat prajiturele ambalate in hartiute dantelate dragalase :) Va prezint cele mai delicioase briose vegane cu caramel ever: dulci, aromate si pufoase, absolut irezistibile!

Ingrediente (18 buc):

  • 200g curmale fara samburi
  • 3 lg ulei de cocos
  • 2 lg seminte de in
  • 200ml lapte de migdale
  • 300g faina alba
  • 100g Green Sugar (dupa gust)
  • 1 lgt praf de copt
  • 1 lgt bicarbonat de sodiu
  • 1 lgt scortisoara

Punem curmalele la hidratat in apa clocotita cat sa le acopere 15 min, apoi le punem cu tot cu lichidul in care au stat in blender alaturi de: laptele de migdale, uleiul de cocos si semintele de in.

Mixam bine totul si punem crema obtinuta deoparte. Intr-un bol amestecam ingredientele uscate: faina, pudra de Green Sugar (adaugati mai mult dupa gust daca doriti), scortisoara, praful de copt, bicarbonatul si un praf de sare. In acest amestec incorporam usor cu o spatula crema de curmale.

Turnam compozitia in forme de silicon pentru briose si le coacem aprox 30 de min la 170C, pana trec testul scobitorii. Pot fi servite cu siropul vegan de caramel, pentru un dezmat absolut :) Pofta mare!

After the sticky toffee cake succes I decided I really had to make a vegan version :) For variation sake I created individual tiny cakes wrapped in beautiful papers :) Here are the best ever vegan caramel muffins: fluffy, sweet and irresistible! :)

Ingredients (18 pcs):

  • 200 g pitted dates
  • 3 tbsp coconut oil
  • 2 tbsp flax seeds
  • 200 ml almond milk
  • 300 g whole puropose white flour
  • 100 g stevia based sweetener (to taste)
  • 1 tsp baking powder
  • 1 tsp sodium bicarbonate
  • 1 tsp cinnamon

Soak the dates in boiling water enough to cover them for 15 min, then place them long with the liquid in the blender. Add the almond milk, coconut oil, flax seed and mix well until smooth.

In a large bowl combine the flour, sweetener (taste and add more, if you want), cinnamon, baking powder, sodium bicarbonate and a pinch of salt. In this mixture slowly pour the date cream and mix with a spatula.

Pour the mixture in silicone muffin cases and bake for about 30 min at 170 C, until a skewer inserted in the center comes out clean. For a complete vegan treat, serve with caramel sauce (recipe here) Enjoy! :)
