Cartof dulce cu oua la cuptor. Aceasta mancare super colorata a la “Taste the rainbow” este gustoasa, satioasa si hranitoare. Poate fi mancata la micul dejun, brunch sau chiar ca si pranz vegetarian :) Contine multe legume si delicioasa vedeta portocalie :)) care mie imi place foarte mult, atat in mancaruri sarate, cat si in deserturi :)

Ingrediente (2-3 portii):

  • 1 cartof dulce mediu
  • 2 ardei grasi
  • 1 ceapa rosie
  • 1 dovlecel
  • sare, piper
  • 1 lg ulei de masline
  • 2-3 oua

Decojim cartoful dulce, il taiem cubulete, tocam si restul legumelor bucati de aproximativ aceeasi dimensiune. Puteti decoji dovlecelul, eu l-am lasat cu tot cu coaja.

Ungem tava cu putin ulei si asezam toate legumele frumos in tava, uniform amestecate. Asezonam cu sare, piper, ulei de masline si coacem legumele in cuptorul preincalzit la 170C timp de aprox 40 de minute.

Facem cu lingura 2 “culcusuri” in care spargem ouale si le mai gatim inca putin, in functie de cat de moale va place galbenusul :) Eu le-am copt 10 minute si au iesit tari, pentru un galbenus moale ar trebui cam 5-7 minute. Pofta mare!

ENGLISH VERSION

Sweet potato egg hash. This super colorful “Taste the rainbow” food is very tasty, filling and nourishing. You can have it for breakfast, brunch or even vegetarian lunch :) It contains lots of veggies and the delicious orange star :)) that I totally love, no matter if it’s savory or sweet dishes :)

Ingredients (2-3 servings):

  • 1 medium sweet potato
  • 2 bell peppers
  • 1 red onion
  • 1 courgette
  • salt, pepper
  • 1 tbsp olive oil
  • 2-3 eggs

Peel the sweet potato and dice it, then chop the rest of the veggies into equally sized pieces. You can peel the courgette if you want, I didn’t.

Spray the tray with a little oil and nicely arrange all the veggies, mixing the well. Season with salt, pepper, olive oil and bake for about 40 min in the preheated oven at 170C.

Using a spoon make 2 “nests” and crack the eggs inside them. bake until the egg yolk is cooked according to your preferences :) I baked mine 10 min and the egg yolk was solid, I think 5-7 min would make a medium runny yolk :) Enjoy!
