ENGLISH VERSION
New recipe for the autumn snack :) I love these empanadas, they are this tender pastry that can be filled with all sorts of goodies, I filled them with carrots, jam, cheese and caraway and I was actually thinking about the chocolate spread options… :) This time I filled them with juicy plums and cinnamon, a winner combo :) And they have 0 sugar,so they are perfect for babies and toddlers, but of course you can add a bit of sweetener if you want, they look pretty with a little bit of white powder on them :)
Dough:
- 300 g flour
- 125 g butter
- 2 eggs
- 3 tbsp cold water
- 1 egg yolk
Filling:
- 200g plums
- 1 tbsp semolina
- 1 tsp cinnamon
For the dough crumble the butter, flour, eggs and cold water using your fingers. When a ball of dough forms, transfer onto a floured surface and knead until not sticky anymore. Roll into a 3-4 mm thick layer.
For the filling dice the pitted plums and coat them with the semolina and cinnamon. Cut out circles (8-9cm diameter) from the dough, place 1 teaspoons of filling on one side and fold in half. Seal the edges with a fork (or use an empanada tool like mine) and transfer to a large tray lined with baking paper.
Grease with egg yolk a, poke with a knife or fork, then bake in the preheated oven at 180 C for approx 30-35 min, depending on their size, with the ventilation on in the last minutes, until they turn golden and crisp. Enjoy!
