Ce poti sa faci cand afara sunt nameti si te plictisesti in casa? Prajituuuuri :D Azi am experimentat una pufoasa si aromata cu ananas si cocos, indulcita natural cu Green Sugar (0 calorii), a iesit un de-li-ciu! :) Si are chiar un aspect in ton cu vremea :)

Ingrediente (8 portii):

  • 350g ananas in suc propriu
  • 250g faina alba
  • 50g fulgi de cocos
  • 125g Green Sugar
  • 2 oua
  • 150ml lapte de cocos
  • 150g iaurt grecesc
  • 2 lg ulei de cocos
  • 1/2 lgt praf de copt
  • 1/2 lgt bicarbonat de sodiu
  • 50ml crema de cocos, fulgi de cocos (pt topping)

Ungem cu putin ulei o tava rotunda cu fund detasabil (diametru 23cm) si o tapetatam cu hartie de copt. Asezam bucatelele de ananas scurse in tava. Batem ouale spuma cu pudra de Green Sugar, adaugam apoi uleiul de cocos, iaurtul si laptele de cocos. Separat amestecam faina cu fulgii de cocos, praful de copt, bicarbonatul si un praf de sare.

Incorporam amestecul umed in cel uscat si turnam compozitia peste ananas. Coacem prajitura aprox 45-50 de min in cuptorul preincalzit la 180C, pana trece testul scobitorii. Dupa ce s-a racit, o scoatem din forma, o taiem felii si o decoram cu crema de cocos si fulgi de cocos. E minunata :) Pofta mare!

What can you do on this snowy weather when bored at home? Bake :) I made a super fluffy pineapple coconut cake, naturally sweetened by stevia with 0 calories, super delicious! And the cake really has an „outfit” to match the weather :)

Ingredients (8 servings):

  • 350 g canned pineapple (unsweetened)
  • 250 g whole purpose flour
  • 50 g desiccated coconut
  • 125 g stevia erythriol
  • 2 eggs
  • 150 ml light coconut milk
  • 150 g Greek yogurt
  • 2 tbsp coconut oil
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 50 ml coconut cream, desiccated coconut (for the topping)

Grease with oil a round spring-form pan (23 cm diameter) and line with baking paper. Place the drained pineapple chunks in the pan. Whisk the eggs and stevia until fluffy, then add the coconut oil, Greek yogurt and coconut milk. Separately mix the flour, desiccated coconut, baking soda, baking powder and a pinch of salt.

Incorporate the dry mixture into the wet one and pour the dough over the pineapple. Bake the cake for approx 45-50 min in the preheated oven at 180 C. Remove from the pan once chilled, slice and decorate with coconut cream and desiccated coconut. It’s wonderful :) Enjoy!
