Eh, uite ca nu putea sa treaca 2019 fara o noua reteta inedita de-a mea (ciudatenie, cum ar zice mama :)), nascuta prin modificarea pe ici pe colo, in punctele esentiale, a unui fel de mancare traditional :))) Dar ne-am plictisi fara un strop de imaginatie si improvizatie, nu? Am facut salata de Boeuf low carb(-ish), cu conopida in loc de cartof, multa carnita si mai putine radacinoase :) Foarte buna a iesit, insa preventiv iubitului i-am facut separat cu cartof, sa fie pace si armonie in familie, da? :))))
Ingrediente:
- 2 bucati de rasol de vita
- 350g conopida
- 2 morcovi mici
- 1 radacina de pastarnac
- 150g telina
- 1 ceapa
- 150g mazare
- 250g castraveti murati in otet
- 250g gogosari in otet
- 250ml maioneza*
- 1 lg mustar
Fierbem carnea de vita pana e frageda, frageda si se desprinde de pe os. Eu o fierb la multicookerul sub presiune, intr-o ora e gata :) Adaugam apoi legumele intregi, curatate (mai putin mazarea si conopida) si le fierbem si pe acestea.
Separat fierbem mazarea si conopida, le punem la scurs. Nu aruncam zeama in care au fiert carnea si legumele, e o supa excelenta si sanatoasa, plina de colagen :) Aruncam doar ceapa din supa, a fost doar pentru aroma.
Ne apucam sa tocam toate ingredientele bine scurse in bucatele mici si egale. Intr-un bol mare amestecam toate legumele si carnea cu maioneza amestecata cu putin mustar.
*Maioneza o fac dupa dupa reteta aceasta, dar in lipsa de timp sau chef, puteti folosi si o maioneza cumparata mai de calitate, cu un numar mai mic de ingrediente :)
Initial am pus salata intr-un bol, am rasturnat-o si am incercat sa o decorez, insa a iesit ceva super kitch, nici nu am pus mai jos poza cu rezultatul final, de rusine :)) Asa ca, schimbare de planuri: am impartit salata in vase micute individuale. Much better. Apropo, desi e mai low carb, tot e foarte calorica, se consuma cu masura :) Pofta mare si la multi ani!
ENGLISH VERSION
Well, 2019 couldn’t have passed before I prepared one of my special recipes (my Mom calls them weird :)), born from adapting a classic traditional recipe :)) But we would be bored without a pinch of imagination, right? :) I made low carb(-ish) Boeuf salad, with cauliflower instead of potatoes, lots of meat and less root vegetables :) really good, but for my honey I prepared classic potato salad, to have peace and harmony in the family :))
Ingredients:
- 2 beef cube roll pieces
- 350 g cauliflower
- 2 small carrots
- 1 parsnip root
- 150 g celeriac
- 1 onion
- 150 g peas
- 250 g pickled cucumbers
- 250 g pickled peppers
- 250 ml mayonnaise*
- 1 tbsp mustard
Boil the meat until tender and comes off the bone easily. I use the pressure cooker and it’s done in an hour :) Add then the whole peeled vegetables (except peas and cauliflower) and boil these too. .
Separately boil the peas and cauliflower until cooked. Collect the meat and veggies, but don’t throw way their boiling water, it’s so healthy, packed with collagen :) Discard only the onion.
Finely chop all the veggies and meat and put them all in a large bowl along with the mayonnaise mixed with a little mustard.
*I make mayonnaise after this recipe, but you can use a good store bought version, with less ingredients, if you don’t have time or the mood to make some :)
Initially I put the salad in a bowl and flipped it on a plate, tried to decorate it, but it was just so ugly I could not post it :))))) So, change of plans: I divided the salad in cute small dishes. Much better. Btw, even if it’s low carbs, it has lots of calories, eat responsibly :) Enjoy and Happy new year!
