ENGLISH VERSION

I have this super simple recipe from my mom, she always makes cauliflower sour cream salad at special occasions, and when she told me it takes only 3 ingredients + salt, I could not believe it :)) This salad is great on toast crackers, with veggies, I think it could make a fine side dish, too :)

And it’s lighter than the mayonnaise version, that I don’t like so much, even though I love mayo :)) If you want it even lighter, you can use Greek yogurt instead of sour cream, wink wink :)

Ingredients:

  • 1 medium cauliflower
  • 250g sour cream
  • 1 bunch of dill
  • 1 tsp salt

Boil or steam the cauliflower florets, depending on it’s easier for you (they say steaming is healthier). I cooked mine in my pressure cooker, 5 min on Steam, with the rack inside, 250ml water in the pot and a silicon steaming accessory.

Drain the cauliflower well, then transfer to a bowl and mash with a fork, not too much, to keep some texture :) Add chopped dill, sour cream and salt, you can put as much salt as you like, I like it with more so I put one teaspoon :)

Mix well and serve right away or store in the fridge for later, the flavors combine even better when chilled :) this is super tasty and healthy appetizer, enjoy!
