Pofta mare!

ENGLISH VERSION

I made my first chestnut puree 4 years ago, recipe here, but now here is a super improved version, with boiled chestnuts instead of bakes ones, lots of powdered sweetener and plenty of rum :)) This puree is super delicious, creamy and sweet, you will love it! :)

Ingredients:

  • 850 g whole chestnuts (625g peeled)
  • 200 g powdered erythritol
  • 100 ml rom Stroh
  • 2 tsp vanilla extract
  • 400 ml water

Score the chestnuts with an X, then boil them for 4-5 min. Take them out of the water and peel them, then boil them again in clean water for about 15-20 min, until fork tender. I boiled mine whole all the way, because my baby fell asleep in my arms :)) So that works, too :)

Blend super well the chestnuts, water (I know it seems a lot, but cooked chestnuts are very dry and absorbs lots of water), sweetener, rum and vanilla. I used Stroh Jagertee rum, it’s especially for sweets. I also put lots of sweetener, because this puree is more like a jam, nice and sweet, but you can of course adjust the used sweetener.

Blende everything super smooth, I started out with my Vitamix and ended up using the vertical blender, which worked better :) Store in jars in the fridge, these quantities make about 2 small 400ml jars. Enjoy!
