La provocarea NoSugarShop si Oale si Tigai, am reusit sa fac un SUPER cozonac keto cu nuca si ciocolata cu MULTA umplutura, asa cum il face bunica mea :) A iesit demential, o bunatate, rumen si frumos, fara zahar, fara gluten, keto si low carb, potrivit pentru persoanele care vor sa manance o versiune mai sanatoasa de cozonac :) Daca vreti sa ma sustineti in aceasta campanie, orice apreciere, like postarilor aferente de pe Facebook si Instagram ma vor ajuta :)

Ingrediente:

Umplutura:

Punem drojdia cu 3-4 linguri de apa calduta/calaie (NU fierbinte) si 1 lingurita de miere. Zaharurile din miere vor fi “mancate” de drojdie, don’t worry :) (dar daca nu vreti, puteti folosi inulina). Lasam amestecul la loc caldut pana face bule ca in imagine. Incepem sa batem cu mixerul ouale si indulcitorul pana fac spuma.

Adaugam mixand in continuare, alternativ: laptele de migdale, untul moale (la temperatura camerei sau topit si racit), Ketomix, amestecul de drojdie, vanilia si romul. Mixam pana obtinem un aluat moale, omogen si lipicios. Il lasam 1 ora intr-un loc caldut, in bol acoperit cu folie.

Pe o suprafata pe care am pudrat din belsug faina de cocos, punem aluatul, presaram si peste el faina de cocos, asezam o foaie de copt sau o folie alimentara si il rulam intr-un dreptunghi.

Pentru umplutura amestecam intr-un bol: nuca macinata, crema de ciocolata, vanilia, romul, albusurile, eritritolul si cacao FitFood. Presaram umplutura uniform pe dreptunghiul de aluat si rulam totul cu MARE grija, pentru ca e fragil, sub forma de rulada :)

Transferam cu grija cozonacul in tava 33*14cm de la Oale si Tigai (aceasta este) unsa cu ulei si tapetata cu hartie de copt, il ungem cu galbenus si presaram fulgi de cocos deasupra. Il coacem 60-70 de min la 170C, pana e rumen, frumos si trece testul scobitorii.

Poate voi aveti rabdare sa se raceasca inainte de a-l felia, eu nu am avut :)))) Pofta mare, sper sa testati aceasta reteta de sarbatori. Sau poate va tenteaza acest pandispan cu ketomix, e DEMENTIAL. Si inca o varianta grozava de cozonac keto, cu video, aici. Paste fericit! :)

Ingredients:

  • 200 g Ketomix sweet bread mix
  • 4 eggs
  • 200 ml almond milk
  • 50 g melted butter
  • 10 g dry yeast
  • 1 tsp honey or inulin
  • 80g FitFood erythritol
  • 1/4 tsp vanilla powder
  • 1 tbsp rum or 1 tsp rum essence
  • coconut flour for dusting the working surface

Filling:

  • 220 g ground walnuts
  • 40g FitFood erythritol
  • 2 egg whites
  • 150 g protein chocolate spread, sugar free
  • 1 tbsp dark cocoa
  • 1 tbsp rum, 1/4 tsp vanilla powder
  • for the topping: 2 egg yolks, almond flakes

Put the yeast with 3-4 tablespoons of lukewarm water and a teaspoon of honey in a bowl, stir. (Don’t worry, the sugars in the honey will be absorbed by the yeast :) but you can also use inulin). Let the mixture sit in a warm place until bubbly. Mix the eggs and sweetener with a stand mixer.

Start adding, alternatively: almond milk, softened butter, Ketomix, yeast, vanilla and rum. Mix until you get a soft, sticky dough, let it rise 1 hour in a warm place, covered with cling film. On a surface dusted with coconut flour, put the dough sprinkle more flour on it, add a baking paper or clingfilm and roll into a rectangle.

For the filling mix the ground walnuts, chocolate spread, egg whites, sweetener, cocoa, vanilla and rum.Sprinkle the filling over the dough and CAREFULLY roll into a cylinder (the dough is very sticky). Transfer gently into the loaf pan (33*14cm) and bake for 60-70 min at 170C, until golden brown and dry inside (insert a skewer and see if it comes out clean). Cool then slice and enjoy! :)

    • Buna Georgeta, doar inulina ca indulcitor keto activeaza drojdia, cred ca se poate si fara, insa nu va creste la fel. O zi frumoasa!
