Pentru ca au inceput sa apara capsunile cu gust (yeei!), am facut azi un tort keto cu mascarpone si capsuni DEMENTIALLLLL, vreau sa spun ca au mancat si Ilinca si tati, Ilinca a mai cerut o felie chiar, deci… OMG! :)) Blatul este aproximativ cel de la acest pandispan cu ketomix foarte apreciat :) Super pufos si foarte asemanator cu un blat normal cu faina alba :) Va invit sa dati scroll pentru multe poze mouth-watering :)

Ingrediente:

  • 7 oua
  • 90g indulcitor (eritritol)
  • 2 lg ulei (de masline/cocos)
  • 1 lgt extract de vanilie
  • 40g Ketomix waffe*
  • 1 lgt praf de copt

Crema:

  • 500g mascarpone
  • 2-3 lg indulcitor
  • 1 lgt extract de vanilie
  • 400g capsuni

Separam ouale, batem albusurile spuma cu un praf de sare pana devin spumoase, apoi adaugam indulcitorul (de preferinta pudra sau rasnit fin de voi). Batem totul pana obtinem o bezea lucioasa.

Separat amestecam galbenusurile, uleiul si vanilia, incorporam usor acest amestec in cel de albusuri. Cernem Ketomix cu grija (presand pe sita pana se cerne) si il incorporam usor, adaugam si praful de copt. Trebuie neaparat cernut pentru ca are cocoloase :)

Ungem o forma rotunda de tort (23 cm diametru, baza detasabila ca aceasta) cu ulei si o tapetam cu hartie de copt. Turnam compozitia in forma si o coacem 30 de min la 170C, sau pana e rumena si trece testul scobitorii. Dupa ce blatul s-a racit putin, il taiem in 2 cu un cutit mare, cu lama lata.

Pentru crema batem cu mixerul branza mascarpone rece, indulcitorul si vanilia. Punem 2/3 din crema pe jumatate de blat, adaugam 300g capsuni taiate cubulete si asezam cealalta jumatate de blat deasupra. Decoram cu restul de crema si de capsuni (100g). Pofta mare! Tort keto cu mascarpone si capsuni

*Daca NU aveti Ketomix, iata cateva alte variante de blat keto/low carb: cel mai pufos pandispan low carb, pandispan keto pufos, pandispan keto cu cacao, pandispan cu faina de migdale.

ENGLISH VERSION

Because there are tasty strawberries now in markets (yeei!), today I made an AMAZING keto strawberry mascarpone cake, my husband and Ilinca ate a slice, she even asked for a second one, OMG! :)) Super fluffy and similar to plain flour cake :)

Ingredients:

  • 7 eggs
  • 90 g sweetener (eritritol)
  • 2 tbsp oil (olive/coconut)
  • 1 tsp vanilla extract
  • 40 g Ketomix waffe
  • 1 tsp baking powder

Filling:

  • 500 g mascarpone
  • 2-3 tbsp sweetener
  • 1 tsp vanilla extract
  • 400g strawberries

Separate the eggs, beat the egg whites with a pinch of salt until they form stiff peaks, then add the sweetener (preferably finely ground into powder). beat everything until you get a nice stiff meringue.

Separately mix the egg yolks with the oil and vanilla, gently fold in into the egg whites. Sift in the Ketomix and baking powder. It really must be sifted, because it’s lumpy :)

Grease a cake pan (23 cm diameter, detachable bottom) with oil and line with baking paper. Pour the batter int the pan and bake at 170 C for about 30 min, until a skewer inserted in the center comes out clean. Once cooled, cut the cake in 2 layers with a long, sharp and wide knife.

For the filling bat the mascarpone, sweetener and vanilla. Put 2/3 of the cream on one half of the cake, add 300 g of the strawberries, chopped, add the other cake layer and the rest of the filling. Decorate with the remaining (100 g) strawberries. Enjoy!
