Meiul este o cereala fara gluten, cu origini in Asia si Africa, si reprezinta o sursa excelenta de fier, vitamine B si fibre. Asadar pentru a-l include in alimentatia noastra, va propun o mancare calda hranitoare si foarte aromata: pilaf de mei :)

Ingrediente (4 portii):

  • 1 cana de mei decorticat (120g)
  • 3 cani de supa de legume (750ml)
  • 2 lg ulei de masline
  • 450g ciuperci champignon
  • 1 ceapa
  • 2 catei de usturoi
  • 4 lg seminte de pin
  • 4 lg sos pesto (cumparat sau facut in casa)
  • sare, piper dupa gust

Intr-o tigaie incalzim uleiul, adaugam apoi ceapa si usturoiul tocate marunt. Taiem ciupercile dupa bunul plac si le adaugam si pe ele, alaturi de mei.

Turnam supa si lasam mancarea la foc mediu, amestecand constant, pana se absoarbe lichidul. Punem pilaful in farfurii, facem o gropita in mijloc si adaugam cate o lingura de sos pesto si muguri de pin. Pofta mare!

*Baby-friendly: folositi foarte putina sare doar dupa varsta de 1 an, iar piper cu masura, fiind un condiment puternic si iritant gastric. Caliti legumele la foc mare in putina apa si adaugati uleiul la final.

ENGLISH VERSION

Millet is a gluten-free cereal originated in Asia and Africa and it’s an excellent source of iron, vitamin B and fiber. So to include it in our daily diet, I suggest this warm, nutritious meal: millet risotto :)

Ingredients (4 servings):

  • 1 cup millet (120g)
  • 3 cups vegetable soup (750ml)
  • 2 tbsp olive oil
  • 450 g mushrooms
  • 1 onion
  • 2 cloves of garlic
  • 4 tbsp pine nuts
  • 4 tbsp pesto sauce (bought or homemade)
  • salt, pepper to taste

Heat the oil in a pan and saute the chopped onion and garlic cloves. Cut the mushrooms as you like and add them to the pan, along with the millet.

Pour the soup and let it cook on medium heat , stirring from time to time until the liquid is absorbed. Place the risotto on plates and add a tablespoon of pesto sauce and pine nuts on each one. Enjoy!
