Azi avem din nou in meniu biscuiti dietetici, fara zahar, fara gluten si low carb. Reteta aceasta a fost mega testata pe Facebook si a trebuit sa o incerc si eu, bineinteles adaptata dupa ce am avut in camara :) Biscuiti cu faina de cocos si nuca. Minunati alaturi de o cafea fierbinte sau un ceai aromat, mmmm… :) E foarte usor de dublat reteta, if you know what I mean… :D

Ingrediente (15 buc):

Mixam untul la temperatura camerei cu indulcitorul, adaugam apoi vanilia, ouale. La final adaugam faina de cocos, cea de nuci, praful de copt si omogenizand bine, pana obtinem un aluat moale, fin.

Formam cu mainile umezite 15 bilute pe care le aplatizam si le asezam pe o tava intinsa tapetata cu hartie de copt. Coacem biscuitii 12 de min in cuptorul preincalzit la 180C, pana se rumenesc putin pe margini. Pofta mare!

ENGLISH VERSION 

Today we have super healthy diet cookies, again, sugar free, gluten free and low carb. This recipes has been really popular on Facebook, so I had to try it myself, adapted with what I had in my pantry :D Coconut flour walnut cookies. Wonderful next to a hot cup of coffee or tea, mmm…. :) And the recipe is really easy to double if you know what I mean… :)

Ingredients (15 pcs):

  • 110 g butter
  • 40 g coconut flour
  • 40 g walnut flour (or almond meal)
  • 1/2 tsp baking powder
  • 4 tbsp stevia erythritol
  • 2 eggs
  • 1 tsp vanilla extract

Whisk the butter at room temperature with the sweetener, then add the egg and vanilla. In the end fold in the coconut and walnut flour, baking powder, mixing well, until you get a smooth soft dough.

Using your wet hands, form 15 balls, flatten them with your palms and place them on a tray lined with baking paper. bake the cookies in the preheated oven at 180C, until they turn slightly brownish on the edges. Enjoy!
